Description

Bring your taste buds and join our resident Cheese Monger, Marie Calderon, as she leads you through a mouth tingling experience tasting a variety of local, sustainably produced cheeses of varying styles. Marie will show the milk changes for fall. She will also get in the detail of explaining molds, rennet, flavor profiles, and how to choose the perfect combination of cheeses to make a delicious Fall cheese plate. The discussion and sampling will also include pairing ideas for what to serve with the cheese plate.

Presenter: Marie Calderon
Marie is a passionate and dynamic cheese expert that loves educating people on the many aspects of cheese. Marie has been involved in the cheese industry since 1998. Her knowledge and experience has ranged from wholesale to retail. She has worked closely with family farmers, cheese makers, and cultivators both locally and abroad. Marie recently earned her title as a Certified Cheese Professional from the American Cheese Society, which has placed her in an elite group of individuals that demonstrate comprehensive knowledge and skills. You can often find Marie hosting cheese nights at her local market educating customers on: types and styles of cheese, how seasonality and regional location effects quality and flavor of cheese. Marie’s enthusiastic, friendly approach is always inspiring. When Marie is not promoting or educating others on cheese, you can find her reading literature, cheering on her favorite football team, and playing with her Australian Shepherd, China.

Registration is required in advance for culinary programs. All proceeds benefit educational programming at 21 Acres and initiatives related to accelerating social change toward more sustainable ways of growing, eating and living that protect the environment while supporting a better quality of life.
